The Prawn & Mango Salad

This super fresh, summery salad is great if you're watching your weight or if you need a tangy fix. With prawns, asparagus, mango, lemon, pomegranate seeds and avocado - it is a meaty, satisfying salad with a sweet but tangy taste.

INGREDIENTS (Makes 2 main courses or 4 starters)
250g / 1 cup of King Prawns
1/2 cup pomegranate seeds
1 ripe avocado
1 bag of peppery Italian style salad
1 cup of mango pieces
1 bunch of thick asparagus tips
3 or 4 spring onions
1/2 lemon
3 Tbsp of Extra Virgin Olive Oil
Salt & Pepper to taste

Each salad (as a main course) contains 450Kcal
25g of Fat
15g of protein
13g of Carbohydrate

1) Place the salad in a bowl and add the prawns and pomegranate seeds
2) Cut the avocado and mango in small pieces, and slice the spring onions thinly. Add this to the bowl.
3) Starting with the tips, grate the asparagus using the large holes and add this to the salad.
4) Squeeze the juice of half a lemon, add the olive oil and salt - whisk together for a few minutes until your salad dressing has thickened
5) Mix, serve and enjoy!
