Daisy Lowe makes strawberry and coconut granita
Being a model means Daisy Lowe has to be careful to stay in shape, ‘‘but I’m a total sugar addict!' she laughs. ‘If I didn’t have healthy alternatives to hand, I’d just grab them instead. For the past 10 years it's been drilled into me that carbs and sugar are evil, so a few years ago I started hunting out alternatives to sugar, and discovered along the way that healthy treats made me feel better. I had more energy and even lost a few pounds.’
Daisy has called on all her healthy-eating experience and is writing a new sugar-free cookbook called Sweetness & Light – 60 Recipes For Healthy Sweet Treats, out on 3rd July (Quadrille books, £16. It was Daisy's mum who suggested she share her recipes with the wider world. 'A lot of young girls contact me through Twitter asking my advice about body, diets and food - I thought that a book like this could be a gift to them,' says Daisy. ‘Food is one of life's great pleasures and I don’t want to people to feel guilty about food. That’s why I wrote this cookbook.’
DAISY'S STRAWBERRY AND COCONUT ICECREAM/GRANITA
Makes 1 .25 litres
- 200g frozen strawberries
- 60mls agave
- 800ml light coconut milk
Add all ingredients to the blender and blend together.
Store in an airtight container in the freezer.
Once frozen, remove the container from the freezer for 20 minutes before Using a fork turn the frozen mix into a granite.
Serve with fresh strawberries.
