Fancy a Christmas cocktail? We’ve asked our friends at hip and happening blog Barchick to track down some of the UK’s best bars serving drinks to get you in the yuletide spirit, and we’ll be bringing you a few of them over the next week. This recipe today comes from Gordon Ramsay’s restaurant York & Albany, which has come over all festive this December by installing a pop-up Winter Cabin next to their Regents Park gastro and lining it with tweeds, tartans, animal skins, antlers and taxidermy.
Drinks on offer include hot buttered rum hot chocolate which you sip while feasting on game sausage rolls, wild boar sausages and other tasty bites, plus homemade marshmallows that you can toast yourself. You can even hire out the whole cabin for private parties if you fancy. One of Barchick’s favourite drinks at the Y&A is called The Treacle, a toasted almond infused whisky that’s so delicious you won’t want to share it. Here’s how to make it…
To Make The Treacle
First make the almond whisky by lightly toasting a small handful of blanched almonds, and adding them to a bottle of Johnnie Walker Black Label for one hour. Strain the almonds off using a muslin cloth. Dehydrate them in a cool oven then coat them in white sugar for the garnish.
Pour 50ml toasted almond infused Johnnie Walker Black label into a crushed ice filled cup with 10ml apple juice and 5ml maple syrup. Garnish with your sugar-coated whisky almonds and enjoy!
